Grilled Cheese with Sweet Potato Fries
Made this quick meal the other night with some left over csa vegetables.
To start preheat your oven to 375 and place a baking sheet in the oven.
Slice up a few sweet potatoes into fry sized pieces:
Then season with a bit of rosemary and salt:
Toss to mix.
Carefully spread the fries on the the preheated baking sheet, drizzle a little bit of olive oil to keep the fries from sticking.
Cook in oven until crispy, about 20 minutes.
For the grilled cheese, heat a bit of butter in a large pan.
Place 4 slices of bread in the pan and sprinkle cheese on each piece.
I like to add some chilies to mine.
Cover with other slice of bread and flip when cheese melts.
We had some salad greens but no dressing, so I made a quick honey Dijon dressing with Greek yogurt, molasses and some Dijon mustard.
Take 6oz of yogurt, 1 table spoon of mustard and 1 table spoon of molasses and mix in a small bowl.Pour over salad and toss to coat evenly.
When the grilled cheese is ready, plate and enjoy!
