Venison Sausage Chile
-2# Hot Italian sausage (I used elk sausage)
-1 onion
-3 cloves garlic
-1 sweet potato, peeled
-one packet taco seasoning
-2 cans diced tomatoes
-20oz dark beer
-1/2 cup dark molasses (optional)
Dice up onion, garlic and sweet potato.Place in a heavy stockpot with olive oil over medium heat. Cook until onion are translucent. Add the meat and taco seasoning.
Stir together and let cook until meat is done. Once meat is ready and everything is smelling tasty, add two large cans of diced tomatoes and juice. Add in the beer and molasses and let simmer for at least 45 minutes.
Serve with corn bread and enjoy!
